Juicy Sweet Potato–Apple–Blueberry Spelt Muffins
Ingredients (make about 13 muffins):

- 300g (10.5oz about 2 small) sweet potatoes
- 300g (10.5oz about 2 1/3 cups) spelt flour (Type 1050)
- 1 packet (about 2 tsp) baking powder
- 1tsp cinnamon
- 2 large eggs
- 70g (2.5oz 5 tbsp) butter
- 1 apple
- 120ml (1/2 cup) milk
- 100g ( 3.5oz about 1 cup) frozen blueberries
- Peel the sweet potatoes, wrap them in damp kitchen towels, and microwave at medium power (~600 W) for about 15 minutes until soft.
- Peel and dice the apple. Cook it together with the frozen blueberries, a splash of water, and the cinnamon until soft.
- Mash or blend the cooked sweet potatoes together with the softened fruit until smooth.
- Soften the butter in the microwave for 3 minutes at medium power. Meanwhile, measure the flour.
- Mix the eggs, milk, and baking powder, then stir in the softened butter.
- Add the sweet potato–fruit mixture to the flour mixture and stir until a smooth batter forms.
- Line a muffin tray with paper liners.
- Distribute the batter evenly among the liners.
- Bake in a preheated oven at 350 °F (180 °C) for 45–60 minutes.
- Test with a skewer or toothpick if it comes out clean, the muffins are done.
- Remove the muffins from the tin and let them cool on a wire rack.
